USA Made from scratch by Keith Nix Knives. This Short Petite chefs knife has the same steel and specs as the tall petite, only it's 1.5" tall instead of 2". 5.5" to 6.5" long and 1.5" tall. It has a sleeker look to my eye and looks great next to the 8" chef's knife.
Heat treated in-house to 62-63HRc. Choice of nine different steels lets you maximize edge retention, toughness, stain resistance, or a balance of all three! Your choice of handle materials. These knives are made thin for cutting and slicing excellence!
